Monday: Potato sausage, potatoes, stir-fried cabbage

Tuesday: One-pot Mexican spaghetti, avocado slices

Wednesday:  Vegetable soup with veggies from Bountiful Basket that need to be used up

Thursday:  Wyatt & Afie's sesame chicken from the frozen dinner club

Friday:  Pizza

Recipes I'm thinking about making for Thanksgiving

Have I mentioned I love Thanksgiving?  No?  Well, it's just about my favorite holiday because it is all about family, friends, and being thankful.  There is some pressure to put on a good meal, but none of the overwhelming expectation of gifts and décor that comes with Christmas.

And speaking of food, here are some recipes I'm considering (and this list will increase!):

Monday: Beef stew (beef from the freezer, veggies that need to be used up), biscuits

Tuesday:  Kung Pao Chicken over rice (from last week--didn't get to it)

Wednesday Crockpot chili (I have a lot of salsa that needs to be used up and this uses salsa)

Thursday: Chicken Fajita Bubble-Up Bake, vegetables/fruit

Meal Plan Sunday

This is the 5th or 6th week of eating {mostly} from our pantry.  I'm trying to get things cleared out of the freezers in particular and save a little cash.

The menu is a work-in-progress.

Monday:  Chicken nuggets from the freezer, fresh salad, grapes

Tuesday:  Grilled sweet-and-sour meatballs, brown rice. I'm going to use this recipe as inspiration and use what I have on hand. I think it will involve meatballs, bbq sauce, pineapple chunks, and little sweet peppers.

Meal Plan Sunday

I am on my 5th week of a Pantry Challengs.  I'm doing my best to reduce the amount of food I have stockpiled in our cupboard, pantry, fridge and freezers.  There is a lot and that's not even counting the long-term food storage we have.

Monday:  Mexican Flatbread Pizza (tortillas, refried beans, cheese, onions)

Tuesday:  Meatball sandwiches  (frozen meatballs, bread/rolls, Italian sauce, cheese), No-Bake cereal bars for dessert

Wednesday:  Light chicken soup (frozen chicken, frozen brown rice, carrots, other vegetables)

Thursday:  [leftovers]

Friday:  Pizza

No menu today

This should look really enticing, right?
And here is a link to the Caribbean Chicken Kabobs recipe.

But my stomach feels so awful that nothing sounds appealing right now.  So I'll make this later in the week and perhaps will even buy some jerk seasoning.  Or maybe I have some, now that I think of it . . . but I may have bought just a tablespoon or two from a "spices by the pound" dispenser at a grocery store.  Anyway, I'm sure my family will like it.  I will too in a few days.

Meal Plan Sunday

Monday:  Grilled ham and cheese pull-apart sandwich loaf, fresh fruit and veggies [I did this on the grill and we really liked it]

Tuesday:  Old West grilled bean and burger packs, rolls  [I did this one on the grill too and it was a hit.  I substituted a can of black beans for the bbq beans because I didn't have any.]

Wednesday:  Three-bean macaroni salad

Thursday:  Crunchy chicken salad

Friday:  Pizza

Monday:  Grilled pineapple chicken kabab packs  [these were really good, although I divided the ingredients among 6 packets so they were a little small]

Monday:  Honey Lime Chicken over rice

Tuesday:  Beef barley stew + bread [This stew is REALLY good--I made a second one and froze it in a gallon bag before cooking.  It'll be an easy dinner in a few weeks.]

Wednesday:  Pulled BBQ pork on buns, finger vegetables [slow cooked pork roast, shred and add bottle of BBQ sauce]
